Simnel Cake – The Easter tradition that mothers used to love

The Simnel cake is similar to the Christmas cake only it is made for Easter and particularly common in Great Britain and Ireland, but popular in other parts of the world as well. The cake has its roots in mediaeval times around the 17th century when the servants would bake this cake and bring it home to their mothers during Easter. The cake is not overly sweet, making it the perfect treat during Easter, and other traditions would eat the cake at the end of Lent, which was on Easter Sunday.

The Simnel cake is very similar in taste to that of the Christmas cake, but marzipan is used instead of traditional icing. Traditionally, the cake was made from white flour, butter, eggs, sugar, spices, zest, dried fruits, and candied peels.
